Carrying on her family’s heritage, Ruby uses food to serve others, taking meals to job sites and those in need.
When she started selling brisket tacos from her home in Tyler, TX, hundreds of people wrapped around the block. It was a scene big enough to get shut down by the health department.
When her home business got shut down, Ruby took it as the push she needed to start something bigger.
With only $20 in her pocket, she opened up her first restaurant on East Gentry Parkway in Tyler.
Today, Ruby’s Mexican Restaurant has expanded to 5 locations and a food truck.
We’re proud to serve our community with authentic Mexican cuisine, catering to local schools, businesses, and events.
When people can’t afford to visit our restaurants, we go to them. We give away thousands of hot plates to the homeless, disaster-stricken, and local hospitals.
